Spicy Chicken Sausage & Veggie Stir-fry

A healthy, go-to meal with loads of flavor! It is completely customizable & pairs perfectly with a variety of side dishes & household favorites.


Spending time in the kitchen & cooking multi-step recipes isn't something that I love doing. Instead, I try to find quick and easy meals for myself & my family that are not only delicious, but nutritious. In less than 30 minutes, you will have a delicious & healthy stir-fry that the whole family will love!

 

Spicy Chicken Sausage & Veggie Stir-fry


Ingredients:

  • Large sauté pan

  • 1 package of spicy chicken sausage

  • 2 small zucchini

  • 2 small yellow squash

  • 1 red pepper

  • Additional veggies of your choice (optional)

  • Cayenne pepper (to taste)

  • Onion & garlic powder (to taste)

  • Salt & pepper (to taste)

  • Additional spices (optional)

Note: Spicy chicken sausage can be substituted for another sausage of your choosing.



Directions:

  1. Cut up all veggies into small, bite sized, pieces

  2. Store cut veggies in a bowl for later

  3. Cut chicken sausage into approx. a 1/4 inch thick slices

  4. Prep a large sauté pan with olive oil & place chicken sausage in the pan

  5. Cook on medium/ high heat until sausage is browned

  6. Add veggies to the pan

  7. Sprinkle in desired spices to taste

Note: I use salt, pepper, cayenne pepper, garlic powder, and onion powder


8. Cook veggies until soft

9. Serve over a bed of rice, a green salad, or in a pasta salad & ENJOY!
